In Germany, side dishes (beilagen) aren’t just extras—they’re the co-stars of the plate. Honestly, sometimes I think we’re more excited about the spätzle, bratkartoffeln, or sauerkraut than the main dish itself (don’t tell the schnitzel).

But it’s not all carbs and comfort—red cabbage, green beans, peas and carrots, and other veggie sides play just as big a role. Every region has its favorites, and every Oma has her own version—and yes, hers is always the best.
