I was born and raised in Frankfurt and my Mom made the Grüne Soße a little bit different and I wanted to share her recipe with you.
4 hard boiled eggs
2 cups of greek yoghurt
1 cup of sour cream
1/2 cup of buttermilk
( if you have access to quark, use it instead of yoghurt and sour cream)
salt and pepper
2 tbs white vinegar
Since I do not have access to all the herbs, I only use plenty of fresh dill, cilantro, spring onions, and parsley.
I finely chop all the herbs (by hand, don't use a blender), and hard boiled eggs. I whisk together the yoghurt, sour cream, and buttermilk, add the eggs and herbs, salt and pepper and vinegar. Let it sit for about 20 minutes. I serve them with "Pellkartoffeln."
