Chocolate Apple Christmas Cake

by Ed Reiter
(Davenport, IA USA)

My Oma made this cake every Christmas. She iced it with a white frosting that ran down the sides. She decorated it with little silver balls (candy). It is a favorite memory and I thought after she passed I would never have it again until I found the recipe in her Recipe Book.

Here it is.

Chocolate Apple Christmas Cake

3 eggs
2 Tbsp. cocoa
1 tsp. soda
2 cups sugar
1 tsp. cinnamon
1 tsp. allspice
1 cup margarine
1 cup chopped nuts
1/2 cup water
1/2 cup cocoa bits
2 1/2 cups flour
2 apples chopped
1 Tbsp. vanilla

Beat eggs, sugar, margarine, water, till fluffy. Sift flour and soda, cocoa and spices. Add to cream mixture and mix well.
Fold in nuts, chocolate bits, apples, and vanilla evenly. Spoon into loose bottom 10-inch pan, greased and floured. Bake at 325 degrees 60 to 70 min.
