Sweet Potato Soup Recipe – Oma's Süßkartoffel-Suppe

Makes 6 servings
Ingredients:
- 1 cup diced onions
- 1 - 2 tablespoons olive oil
- 2½ pounds sweet potatoes, peeled and cubed
- 2 carrots, peeled and chopped
- 1 large apple, peeled and chopped
- 5 cups vegetable stock
- salt, pepper, nutmeg
Instructions:
- Heat the oil in a large saucepan. Add onions. Cook until translucent, but not browned, about 5 minutes.
- Add sweet potatoes, carrots, apple, and stock.
- Bring to boil, reduce heat, cover, and simmer for about 25 minutes or until vegetables are tender.
- Puree soup either in a blender (Be careful, it's hot!) or use an immersion blender.
- Season with salt, pepper, and nutmeg.
