Oma's Easy Cheese Soup, German-style
Here's my easy cheese soup, aka Käsesuppe, that's great on a cold winter's night. This German Käsesuppe is delicious with a hearty loaf of German bread.
Taking only about 30 minutes to make, this quick easy soup is a favorite among kids. Buy your cheese already grated - easier still.

Makes 4 servings
Ingredients:
- 3 tablespoons butter
- 1 garlic clove, crushed
- ¼ cup flour
- 4 cups chicken broth
- ¼ pound Gouda, shredded
- ⅞ cup cream
- salt, pepper, nutmeg to taste
- 1 onion, sliced
- 1 tablespoon butter
- chives to garnish
Instructions:
- Melt 3 tablespoons butter over medium heat in frying pan. Add garlic.
- Stir in flour.
- Add chicken broth. Bring to boil, stirring continually. Simmer for 10 minutes, stirring occasionally.
- Add cheese and cream. Season with salt, pepper, and nutmeg.
- Simmer 10 minutes.
- Meanwhile, brown onion slices in 1 tablespoon butter.
- Serve soup, garnished with onion slices and chives.
